Sv. Akademiens Ordlista: gom = tak i munhåla vilket väl gör att det vanliga ordet "gom" kan användas här Om du absolut måste ha med "floor" och "roof" så skulle väl kanske "munhålans botten" och munhålans tak" vara lämpliga uttryck.
