The phrase to earn one's chops has been recorded from the 1990s. It appears to take the jazzman's skill and extend it to any kind of experience, These examples refer to running a nightclub, cooking and baseball.

1993 New York Magazine 27 Sept. 'They just can't shake that Cold War paranoia,' says Westmoreland, who earned his chops under the Lenin and Marx of nightlife, Rubell and Schrager.
2005 Cincinnati Magazine June. At 37, he's already earned his chops at a number of restaurants in Cincinnati and Colorado

A kifejezést eredetileg szó szerint az állkapocs (jaws) és ajkak (upper/lower lips) vonatkozásában, fúvós hangszereken (elsősorban szájharmonikán) játszó zenészekre használták, mára a fizikai értelmén túl bármelyik szakma elsajátítására vonatkoztathatják (ahogy a megadott példákból is látható, pl. mulató tulajdonosától politikusokon át basaball játékosig bárkire). Az értelmező szótárak szerint az "earn one's chops" értelme megfelel a "learn the ropes" kifejezésének, azaz kitanulni a szakma csínját-bínját / mesterfogásait.

Azzal a régebbi változattal rokon, hogy „to earn one's bones”, ami alvilági kifejezés arra, amikor valaki megcsinlálja az első nagy balhéját, és ezzel kiérdemli a bekerülést egy bűnszervezetbe. A (merev) csontokat gyúnyosan (laza) állkapocsra változtatták.

Vagy nem laza állkapocs, hanem laza és meglepő zenei fordulat:

"Chops" is usually associated with the lower part of the mouth, especially the jaw, under the assumption that "chops" originally referred to the lip or jaw movement of brass and reed players (from choppers "teeth"). More likely, however, it originates from a phrase not often heard any more, "chops and changes," referring to swift, unexpected turns or twists ("licks"), as the "chops and changes of fortune."

disagree  Balazs Oroszlany: A három példamondatnak már semmi köze sincs a kifejezés dzsesszes eredetéhez, egyszerűen csak annyit jelenti, hogy az illetők kitanulták a szakmájuk mesterfogásait/csínját-bínját (a legjobban a harmadik példamondatból látszik).

  -> A „dzsesszes” viszont magyarul jelent lazán improvizatívat is (ld. pl. Google "nagyon dzsesszes"). De jó, akkor legyen „laza ujjgyakorlatot szerezni”, ha a TÉNYLEGES eredeti mondatban nincs dzsessz.

agree  Julia Prazsmary: a megoldással egyetértek, csak a magyarázattal nem egészen (így az értelmező szótárakkal sem:), tudtommal a learn the ropes az "alapfok" (eredetileg a hajósinas köteleiről szólt, hogy melyik mire való), az earn one's chops viszont már "mesterfok".
