Es handelt sich zwar um externe, nicht geprüfte Quellen, aber vielleicht kann dir der Begriff "Anfrischen" weiterhelfen. Still standard practice today is for instance 'old-new inoculation' with cheeses, 'back-slopping' or 'back shuffling' with sourdough. Heute noch üblich ist dies z.
