Explanation:
I'm under the impression that there is a fairly strong 1-to-1 mapping between "bitter" = "karvas" and "sour" = "hapan", especially when you're talking about taste. Since I'm under the impression that these two are not the same, nor are they interchangeable, instead of "karvaan makuiseksi tekevä", I would have to side with the "happaman makuiseksi tekevä".

Jos ollaan varmoja siitä, että sanalle "acidulant" ei löydy suomenkielistä vastinetta, niin loogisesti löytyy kolme vaihtoehtoa:
1) kuvata se auki jollakin "happaman makuiseksi tekevä aine"-tyyppisellä ratkaisulla
2) keksiä Suomen Kielitoimiston tapaan täysin uusi sana kuten "hapantaja", "hapantamisaine" tai "hapannin" (hapate on kait käytössä).. tai joku muu vastaava
3) tehdä siitä lainasana, tyyliin "asidulantti"

Sana "hapan" tähän ainakin kuuluu (ja koska kyse on substantiivista, on lisättävä "aine"), mutta huonompi homma on se, että suomessa ei ole sanaa acidulantille. Acidulanttia käytetään tässä happamuudensäätöaineena, joten täytyy kysyä, saanko käyttää sitä.
