Ili za proizvodnju piva - ječmeni slad, voda, hmelj i pivski kvasac

Pivski kvasac dugo nije bio koristen u proizvodnji piva, jer ljudi nisu ni znali za njega. Vrenja su bila spontana i nekontrolirana. Pronalaskom kvascenih gljivica i stvaranjem novih, cistih kultura uz pomoc naucnog rada francuza Louis Pasteura i danca Emile Hansena, pivski kvasac postaje jedan od cetiri bitna sastojka piva. Time je omoguceno dobijanje piva standardizovanog kvaliteta.Pivski kvasac odredjuje vrstu piva, lager ili ale. Procesom donjeg vrenja uz pomoc gljivica Saccharomyces carlsbergensis dobijaju se lagani lageri, a gornjim vrenjem pomocu Saccharomyces cerevisiae gljivica dobijaju se jaki i teski aleovi.
