I am pretty sure it is a colorant, but it is very difficult to track down exactly what it is. I would leave it as "Caramel C"; it you like, you could say "Caramel type C" or "Caramel C colorant", but perhaps best just to leave it as caramel C

One possibility is that it refers to the colorant E150 C, type C of E150 which is caramel:

"There are a series of E150 food additives approved by the European Union (EU). These are used as synthetic colouring agents in food and drink products.

However, I'm doubtful about this. On the other hand, this Mexican chemical company supplies "COLOR CARAMELO C" among many other things:

And here's a document about a colorant called CARAMEL-C COLORANT; it's a letter from Rio de Janeiro to the British-American Tobacco Company in the UK, and describes a product of this name supplied by a Brazilian chemical company. Its industrial uses listed include pharmaceutical.

So I would leave it as Caramel C, which is the safe option anyway.

I doubt "Caramelo C" is simply an abbreviation of "Caramelo colorante". Such an abbreviation in Spanish seems inherently unconvincing to me. I think there are enough indications to suggest that it is probably a particular type of caramel colorant ("type C"), and that this had better be retained even if we can't actually identify what it is.

Not sure about this, but your idea would certainly work

Which would make sense in a soluble oral solution
