Some abalones are referred to as 1-headed abalone, and some as 4-headed abalone, simply because the restaurateurs usually buy their abalone by weight. If they stock-in 1-headed abalone, they make sure YOU, as customers know it, because it means 1 catty(in ancient China) ~ 1.33 lbs ~ 600g is that weight and SIZE of that ONE abalone! Big, isn't it? So 1-headed abalone means 1 abalone PER catty, and 4-headed abalone means 4 abalones PER catty. It's claimed that the bigger the abalone, the more expensive and it tastes better.

The head count (10 or 12 or 32) refers to the number of abalones that make up a kati or 600gm. The smaller the abalone, the younger it is and as it takes years and years to grow to a large size..the standard is that the bigger and older, the better the taste

The sizes are indicated as such – after drying, they will weigh the abalone. They will calculate the numbers of abalone to a catty – 600 gm. If it is one number to a catty then it is called 1 head. That means that 1 number of abalone must be 600 gm – dried. Imagine how big it was when it was fresh. Imagine how many years it takes to grow to that size ? The more numbers you have in a catty, the smaller the sixe of the abalone. A 24 head abalone after cooking is only about 1 ½ - 2 inches in length.

Т.е. чем меньше показатель, тем крупнее это морское ухо и больше ценится. Я бы (если текст позволяет) так и писала "размер - 5 шт. на катти" и пояснила бы насчет меры веса в скобочках. Или, как вы предлагаете, "размер - 5", но с "прим.пер"-ом.
