Hello, I'm working in a project that has a lot of text that doesn't need to be translated between < > (usually codes like ). How could I tell MemoQ to treat all the text between < > as a tag, so I can just put them pressing F9 ?

If the codes are typical or similar to HTML codes, the easiest way is this:
After opening the file in MemoQ: Preparation -> Regex tagger -> choose "Tags and entities" -> OK
That should do it. Look out for cases where the tags actually contain translatable code (for example labels in HTML codes). Also, if your codes are more complicated you might have to dive deeper into Regex codes.
