Not skimping on sockets is a good idea, they'll get used, especially in the busy rooms. I only put one per room and found that actually I could have skipped a couple of rooms (bedrooms where wifi would be sufficient) and added in recreation and business rooms.

Out of interest did you have a special router to accommodate more ethernet cables from the various sockets for the networking and internet?

You don't need a special router per se, but you need a switch and a patch panel. The router connects to the internet in the normal way (in my case the master connection is in the attic) and this is connected to a switch. From the switch, short Cat5e cables lead to one side to a patch panel. The other side of the patch panel connects up to the Cat5e cables that go through the ducts and the walls to the individual sockets.
