Source text - English An alternative to alkali refining, known as steam refining, has been developed. It is a two-stage process which includes pretreatment followed by distillative deacidification.
Pretreatment includes acid degumming, or some variation thereof, followed by acid bleaching in which citric acid or phosphoric acid is added to the bleaching step to aid in the removal of residual phospholipids and trace metals. The phospholipid content after this pretreatment must be five ppm or less. Higher levels tend to cause darkening of the oil during distillative deacidification.
Distillative deacidification is performed in a deodorizing system designed for physical refining.
The free fatty acids of the oil are refined to 0.05 percent or less and the color is usually 1.5-2.5R (Lovibond 5 ¼¨).
The major advantage of physical refining is the absence of soapstock and its attendant splitting and disposal problems. The free fatty acids are recovered as such from the distillate.
Translation - Spanish Se ha desarrollado una alternativa al refinado álcali, conocida como refinado por vapor. Se trata de un proceso de dos pasos que incluye un pre-tratamiento seguido de una deacidificación destilativa.
El pre-tratamiento incluye el desgomado por ácido, o alguna variación de este tipo, seguido de un blanqueado por ácido donde se agrega el ácido cítrico o el ácido fosfórico al paso de blanqueado para ayudar a eliminar fosfolípidos residuales y trazas de metales. El contenido fosfolipídico luego de este pre-tratamiento debe ser cinco ppm o menos. Niveles superiores a este valor tienden a causar un oscurecimiento del aceite durante la deacidificación destilativa.
La deacidificación destilativa se lleva a cabo en un sistema desodorizante diseñado para el refinado físico.
Los ácidos grasos del aceite se refinan a 0,05 por ciento o menos y el color es usualmente 1,5-2,5R (Lovibond 5 ¼¨).
La mayor ventaja del refinado físico es la ausencia de acumulado de jabón y los problemas de separación y eliminación que conlleva. Los ácidos grasos se recuperan del destilado como tales.
