Término o frase en italiano: a specchio
I have seen another Kudoz entry for this term, but the context is different here...
the text is about soups:
"servite la crema di carote *a specchio* nei piatti e guarnite con..."

Thank you! :)

p.s.
US English preferred - if there are any differences that is!

thin layer
Explicación:
Serve the carrot cream as a thin layer in the dishes.
In this case that's what "a specchio" means: the layer of cream is flat and glossy like a mirror in the dish.

serve it clear

Explicación:
One of the meanings of the adjective "clear" is "easily seen through; transparent: clear water."

I am adding a quotation.
"If you prefer to serve the soup clear, float a spoonful of whipped cream on top."
