I'm having serious trouble getting my head around the highlighted part of the phrase - I understand the meaning but the right wording just won't come to me. All help appreciated. Thanks!

*the choice to .... testifies to a mature inclination towards restraint rather than overflowing sentimentality*

*conquistato* seems to suggest experience - hence my choice of *mature*

*sentimentality* does have a negative connotation, you could opt for something more neutral

"confirming that some restraint has been acquired which will prevent an overwhelming flood of sentimentality"

Well, I might have like a bit more context, even though you've given the whole sentence. I take "sentimenti" to be negative and I might go for "sentimentality".
I'd also pare down the word Italian as I think (and you say so yourself) that the sense is evident.

Usually "ritegno" is translated as "restraint". One of the meanings of "restraint" is: "constraint or reserve in feelings, behavior, etc."

What is wrong people?

I refuse to engage in petty comment wars. We give the best we know to our colleagues; I have never engaged in Kudoz to prove others wrong, but just to give my honest opinion.
I leave in an English and French speaking country and I am more than a little puzzled by the Italianate solutions that are sometimes offered in the Italian-English pair.
I tend to avoid overtranslation, even when translating into English deconstructist criticism.
